Merry Christmas Eve, everyone!!
Tomorrow we have family coming over for Christmas Dinner. So today is food prep day. We are excited this year because we have more great vegetables from Farm to Fork in La Jolla. Plus, the orange and tangerine trees we have in our orchard are full of gorgeous fruit! I already have the vanilla bean and winter tangerine cheesecake in the oven -- I have a really good feeling about this cheesecake! For dinner tomorrow, one of the side dishes we have planned is a sweet potato and apple dish. It is always a favorite of mine, with layers of sweet potatoes and apples dotted with cinnamon, fresh squeezed orange juice, and KerryGold butter. The apples we bought at Farm to Fork are some of the best apples I have ever tasted! They are so crisp, clean and flavorful that I am sure they will make this dish taste great.
Sweet Potatoes with Apples
6 sweet potatoes
2-1/2 apples, peeled and sliced
1/2 cup sugar
1 tablespoon cinnamon sugar
1tablespoon orange or tangerine zest
1/4 cup pecans, chopped
6tablespoons unsalted butter
1/2 cup fresh orange juice
salt and pepper to taste
Preheat oven to 350. Butter a 9 x 9 inch baking dish and set aside. Clean sweet potatoes. Cook in boiling water for 10-15 minutes, or until potatoes are tender. Drain, peel, and cut into 1/2 inch slices. Slightly cook apples in boiling water, drain and set aside. In a buttered baking dish, place a layer of sweet potatoes followed by a layer of apples. Sprinkle with some sugar, cinnamon sugar, butter, and pecans. Repeat layers until all ingredients are used. Top with butter slices. Pour1/2 cup juice over the top. Place in oven and bake for 25-30 minutes.
We think that this side dish is a wonderful complement to anything else you might have on your Holiday table.
