Chilaquiles--Mesa Grill Las Vegas

I have been dying to try Bobby Flay's Mesa Grill for years.  Finally, we had the opportunity to dine there on a recent trip to Las Vegas.  The Mesa Grill is located inside Caesar's Palace.  http://www.mesagrill.com/las-vegas-restaurant/.  Having heard that Mesa Grill was a very gluten free-friendly restaurant, we were excited to see what the meal had in store for us.  The service was definitely impeccable.  Our server was extremely knowledgeable about which menu items were appropriate for gluten free diners; in fact, there were two other gluten free parties at the same time that we were there.  We opted to try out the brunch menu.  http://www.mesagrill.com/las-vegas-restaurant/file/2106/Mesa%20LV%20Brunch.pdf.  I love chilaquiles and I love tomatillos (see my previous blog entry: http://noexcusesglutenfreecookbook.blogspot.com/2011/01/tomatillo-sauce-go-green.html) so I knew exactly what I wanted to order.  It was fantastic and I eagerly ate the whole thing!  The tomatillo sauce was very thick--much thicker than my recipe--I checked the Mesa Grill cookbook and I noticed two things: 1) no chicken broth; and 2) 1 cup spinach!  I think that accounts for the thick, rich texture.  Also, Bobby adds a little chipotle to the tomatillo sauce...I like that.  As much as I loved this dish, I would not have minded just a little more heat.  Our server asked me if it was too spicy for me, to which I responded, "nothing's too spicy for me!"

It was the only gluten free dessert on the menu (I really wanted the churros!!) and to become gluten free, the gingersnap crumble was omitted.  The pudding was perfect -- I am extremely particular about puddings and custards, so if I say it's good then it must be good!  It was very chocolately, with the hint of cinnamon and ginger.  It would have been even better with the gingersnap crumble on top...maybe Bobby needs to check out our cookbook for an excellent gluten free gingersnap recipe! 
Overall, Mesa Grill is a place you must visit if you are ever in Las Vegas or in NYC.  I can't wait to go back.
