Comfort Food: The Classic Macaroon

It is almost spring...but there are still some cold days ahead!!
I love to make these classic macaroons to warm up the kitchen.  They are delicious and always a favorite with guests.  Pour some coffee or tea and savor these cookies :)

Coconut-Nutty Macaroons

Ingredients:

2 cups desiccated coconut
1/2 cup + 2 tablespoons pecans or almonds, chopped
3/4 cup sugar
3 egg whites
1 1/2 tablespoons corn syrup
1 teaspoon vanilla extract
1/8 teaspoon salt
2 teaspoons GF Flour Blend
1 teaspoon almond flour
1/2 tablespoon powdered egg whites
1/4 teaspoon xanthan gum
3 ounces semi-sweet chocolate, melted

Preheat the oven to 350 degrees.  Line two baking sheet with parchment paper.  In a saucepan, stir together the sugar, egg whites, corn syrup, vanilla extract, salt, powdered egg whites, xanthan gum, GF Flour Blend, and almond flour.  Cook over medium heat until the mixture is hot to the touch but not boiling.  Remove from heat and stir in the cocnut and nuts.  Drop batter onto the baking sheets.  Bake for about 15 minutes until golden brown.  Remove the cookies from the pan after one minute and transfer to a wire rack to cool.  Once cooled, brush the bottom of the cookies with melted semi-sweet chocolate.  Make 24-30 cookies.
