Kokopelli Restaurant -- Inn at Entrada Clubhouse in St. George, Utah

On our way to Sundance, we stopped off for a night at the gorgeous Inn at Entrada in St. George, Utah.  The Inn at Entrada's St. George location makes it perfectly convenient for travelers who want to check out Zion National Park.  At the same time, it is a relaxing retreat for those who just want to enjoy the natural beauty that St. George has to offer.  Entrada is a private golf community, with about 40 or so luxury casitas available for rental as the "Inn."  The casitas are warm and inviting, and the setting offers exquisite panoramic views of the red vermilion cliffs of St. George red rock country. 








This is our second visit to Inn at Entrada.  This time, we stayed in the spacious 1-bedroom casita, which was perfect for four visitors.  We particularly loved the 1-bedroom casita because it had a fully stocked, gorgeous gourmet kitchen!

While staying at the Inn, we checked out the Kokopelli Restaurant and Lounge for a light dinner ( http://www.golfentrada.com/Default.aspx?p=DynamicModule&pageid=296310&ssid=178318&vnf=1).  The Kokopelli Restaurant is located inside the  Entrada Clubhouse.  Kokopelli Restaurant is led by Le Cordon Bleu trained Executive Chef Tony Olesh, who prepares seasonal menus inspired by local cuisine and fresh, pure ingredients and flavors.  The restaurant staff was extremely knowledgeable and accommodating for gluten free diners.  The manager helped us choose menu items suitable for us, and the kitchen staff took extra care to make sure that there was no cross-contamination.  I chose the Cobb Salad, Sarah had the Entrada Burger (sans bun, of course) with potato soup, and Andie had the Carnitas Street Tacos.  Everything was gluten free except for the potato soup -- Andie was able to enjoy it because she is not gluten free!  Everything was also truly delicious. 





Another fun fact about Inn at Entrada?  High School Musical 2 was filmed there!

Gluten Free Rustic Apple Tart

We recently made this Sliced Apple Tart with some apples given to us by our friends.  It has been a while since we tried this recipe.  What a delightful way to use a few apples you have lying around the kitchen!  This tart is so delicious and easy to make.  The crust is a very simple, almost shortbread-like rustic crust.  The applesauce and apple slices are bursting with flavor.  We top this with simple homemade whipped cream.  If you're having guests, they will love this tart.  Your family will love it.  You can even enjoy it for breakfast; it is not too sweet.

  Sliced Apple Tart
Crust:
1¼ cups GF Flour Blend
¼cup almond flour
1teaspoon baking powder
1teaspoon xanthan gum
1tablespoon powdered egg whites
¼teaspoon salt
1tablespoon granulated sugar
1egg
½teaspoon vinegar
6tablespoons unsalted butter, cut into pieces
Extrasugar (for sprinkling on the crust)
 
Preheat oven to 400°and set aside a large cookie sheet. Using a food processor, combine GF Flour Blend, almond flour, powderedegg whites, xanthan gum, baking powder, salt, sugar, and butter.  Pulse until mixture resembles a coarsemeal.  In a bowl, whisk together the eggand vinegar.  Add 3 tablespoons of thismixture to the coarse meal and pulse until dough just comes together.  If needed, add 1 more tablespoon off the eggmixture.  Form the dough into a disk,wrap in plastic wrap, and refrigerate for 30 minutes.  Between two pieces of parchment paper, rollthe dough into a 12-inch circle.  Removethe top piece of parchment and place the dough, parchment side down, onto thecookie sheet.  Prick the dough with afork and sprinkle with granulated sugar. Bake for 8-10 minutes.  Removefrom oven and cool with the baking sheet resting on a wire rack.
 
Applesauce:
 2apples
½teaspoon ground cinnamon
1tablespoon sugar
1tablespoon lemon juice
3-4tablespoons water
½tablespoon vanilla extract
 
Peel, core, andfinely chop two apples.  In a saucepan,combine the chopped apples, cinnamon, sugar, and water.  Cook over medium heat, stirring occasionallyuntil the apples are tender, about 15 minutes. Transfer to a bowl to cool and stir in lemon juice and vanilla extract.
 
Topping:
 
3apples
½teaspoon ground cinnamon
½tablespoon vanilla extract
1tablespoon lemon juice
1tablespoon sugar
Confectioners’sugar (for dusting)
Vanillaice cream or whipped cream (for serving)
 
Peel and core threeapples and cut into 1/8-inch slices. Combine apple slices with sugar, cinnamon, vanilla extract, and lemonjuice.  Spread the crust with the applesauce, leaving ½- inch along the borders. Arrange the apple slices on top of the apple sauce.  Dust the galette with confectioners’ sugarand bake for 30 minutes until the crust is golden.  Serve immediately with vanilla ice cream orwhipped cream

Gluten Free Mini Chocolate Chip Pound Cake

Yesterday we made this delicious mini chocolate chip pound cake.  It was always one of my favorite recipes when I was young.  I would literally beg my mom to make it!  Once we went gluten free, I set about creating a gluten free version of my childhood favorite.  I made this one with Guittard semisweet baking chips that I chopped up as the "mini chocolate chips" -- if  you can splurge on a premium baking chocolate, it makes a huge difference to the taste of the final product.  Another tip is to use smaller loaf pans than the traditional 9 x 5 loaf pan size; we use a 7 x 3.5 inch loaf pan.  This recipe is SO EASY to make and it will be popular with adults and children alike.  As always, when our recipes call for "GF Flour Blend," make sure you use the flour blend recipe for our cookbook: http://noexcusesglutenfreecookbook.blogspot.com/2012/10/gluten-free-flour-blend-recipe.html




Mini Chocolate Chip Pound Cake
1¼ cup GF Flour Blend¼cup almond flour2teaspoons baking powder1teaspoon xanthan gum1tablespoon powdered egg whites½teaspoon salt1cup sugar 
8 tablespoons unsalted butter 
2 teaspoons vanilla extract2eggs¼cup + 2 tablespoons milk1cup mini chocolate chipsConfectioners’sugar (for dusting)
Preheat oven to325°.  Butter two 7 x 3 ½ x 2-inch loafpans, line the bottoms with parchment, and butter the tops of theparchment.  Using the paddle attachmentof an electric mixer, beat sugar, butter, and vanilla extract until light andfluffy.  Add eggs one at a time.  In a bowl, whisk to combine the GF FlourBlend, almond flour, xanthan gum, powdered egg whites, baking powder, and salt.  Add this mixture to the egg-butter mixture,alternating with the milk.  Stir in themini chocolate chips and pour batter into prepared pans.  Bake for 40-50 minutes until a testerinserted in the center of the cakes comes out clean.  Cool in pan for 10 minutes then remove tocool completely on wire racks.  Whencooled, generously dust with confectioner’s sugar.

Food for Health International just celebrated the opening of their beautiful new office in Orem!  This ribbon cutting turned out to be a great party with the amount of food, product samples,and cake they provided.  The tours of their new facility also gave us a glimpse of how detail oriented this company really is.


The demonstrations helped everyone understand that this company is one devoted to getting natural, healthy foods available to the public in multiple ways.  From food storage to shake mixes, it was all delicious!
