The very first step in your battle to conquer the Wine List is to figure out what you are dealing with. Since there is no way of knowing exactly what you will find on the list, the best way to tackle it, is by understanding how the wine list is organized. The easiest way to do that is to think of the different categories in the list as chapters in a book. It is most likely that the wines will be organized in the following categories:

- Champagne and sparkling wines
- White wines
- Red wines
- Dessert wines

At some restaurants the list can be further subdivided according into countries, especially in the white and red wine sections so that you will see entries such as French red wines, Italian red wines and so on. Usually after-dinner drinks like Cognac, Armagnac, grappas, or liqueurs will not appear as part of the wine list, or if they do, they have their own section near the back of the list.

After you have familiarized yourself with the wine categories in the list and how they are arranged within each category, pay attention to how much or how little information is provided for each wine. Quickly scan to check the approximate number of entries on the list - are there 20 or 200. The longer the list, the more purposeful you might look to your guests convincing them that you know what you are doing...

As soon as your waiter approaches your table, be ready to ask to see the wine list, this not only gives the impression that you feel comfortable with wine but also gives you more time to study it and choose the best one to accompany your meal.
