We stopped by before dinner to take a look at the gluten free menu (Wynn does not post the gluten free menus online, so you must go to each restaurant and ask the hostess to see the allergen-safe offerings). The manager at Botero and she told us that she and her mother were on a gluten free diet, so we felt great dining there with the knowledge that the manager and the rest of the staff really understood the needs of the gluten free diners -- a special thank you to general manager Carissa Villafana! The gluten free menu contains menu items that are already naturally gluten free, but they can also adapt other menus to be gluten free.
We began our evening at the Botero Bar before dinner. The bar is ultra-chic and an an amazing Botero painting prominently hangs above it. I had a lime-cherry cosmopolitan; it was exactly the type of cocktail I had been craving all week -- cool and refreshing, but not too sweet. Delicious!

Once seated, they brought us the gluten free menu without us even having to ask for it -- Carissa remembered us from earlier in the day. This is just one example of the exemplary service we received. They brought us gluten free bread with goat cheese and olive oil while we waited for our meal. I opted for the potato and vegetable gratin, while Sarah chose the organic, free range chicken. Our waiter suggested that we split the chicken and when they brought us two separate plates, each with huge portions, I was amazed! It was so much food, so much delicious food. The chicken was tender and juicy. I could detect the slightest hint of spice or heat in the seasonings and I loved that little kick of flavor (as I always say, the spicier, the better). The skin was crispy and flavorful. The chicken was plated with greens and delicate pearl onions. Our potato and vegetable gratin was excellent as well -- a perfect complement to the chicken dish. At the end of the evening, we were so full that we did not order dessert (or maybe it was because I was wearing a size XXS BCBG bandage dress??). They gave us so much food that we even had leftovers which we finished at about 5am after our night at XS.

The food was excellent. The ambiance was beyond belief - Botero is at once both sophisticated and hip. And finally, the service was incredible. Everyone at Botero treated us like royalty. It was so nice to be able to walk into a restaurant, say "I'm gluten free", and have the warmest reception possible. We asked for gluten free bread, and we got gluten free bread! Of course, as we left the restaurant we walked right past several of the impressive Boteros. We couldn't help but snap a few pictures.

This was the best Las Vegas dining experience that I have ever had. I cannot say enough about this place. We highly recommend Botero and we will absolutely return on our next trip to our favorite city!
After Botero, we headed to XS. Anyone who goes to Vegas must visit XS -- the best nightclub in the world. What more can I say? Gentlemen, if you ever need to make reservations at XS or have any questions at all, Promotions Manager Adam Farer is the man to talk to.
