Sarah's Valentine Video!!!!
Mini Chocolate Ganache Cakes
6 ounces bittersweet chocolate, chopped (or 1 cup semisweet chocolate chips)
1 tablespoon heavy cream
1 tablespoon unsalted butter, softened
2 eggs
1 egg yolk
1/4 cup sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
1 teaspoon almond flour
2 teaspoons GF Flour Blend*
1/2 tablespoon powdered egg whites
1/8 teaspoon xanthan gum
cocoa powder (for dusting)
whipped cream (for serving)
*The recipe for GF Flour Blend is found in our cookbook, see http://www.noexcusesglutenfreecookbook.com/. But, since this recipe calls for such a small amount of GF Flour Blend, you can substitute with a different gluten free flour blend you may already have.
Preheat oven to 400°. Grease six 4-ounce mini-cake pans, cupcake pans, or heart shaped pans. Dust the pans with cocoa powder. To make the ganache melt two ounces of the chocolate together with the cream using a double boiler. Transfer to a bowl and refrigerate until firm. Melt the butter and remaining chocolate in the double-boiler, stirring until smooth. Remove from heat and cool for 10 minutes. Using the whisk attachment of an electric mixer, beat the eggs, egg yolk, vanilla extract, salt, GF Flour Blend, almond flour, xanthan gum, powdered egg whites, and sugar until thick ribbons fall from the beater. Add the cooled chocolate mixture and fold until smoothly blended. Pour batter into pans. Shape the refrigerated chocolate ganache into six truffles. Place one truffle onto of each cake and push down gently. Bake for 9-11 minutes or until the tops of the cakes are firm. Cool cakes for 5 minutes and carefully invert cakes onto a wire rack. Serve warm with fresh whipped cream or ice cream.

Wendy’s Unveils Innovative Restaurant Design in Orem
Utah’s First Remodeled Location Now Re-Opened
SALT LAKE CITY, July 18, 2012 – The Orem Wendy’s restaurant has been innovatively re-designed and was open to the public this week, setting a remodeling trend that will later affect five other Utah Wendy’s locations.
Wendy’s corporate officers came to Orem especially for the ribbon-cutting and formal welcome to the Utah Valley Chamber of Commerce by Chamber President Steve Densley. Those in attendance celebrated the new urban restaurant design and dined on Wendy’s’ fresh food in a fresh, urban-style location. Restaurant visitors can now enjoy over 100 beverage choices, try new baked goods, use the restaurant’s free Wi-Fi and lounge by the fireplace in comfortable chairs.
With over 6,500 restaurants worldwide, Wendy’s is re-opening a total of six restaurants in Utah this year. Utah is the sixth state in the nation to receive the new urban, ultra-modern and traditional restaurant designs. Other restaurants that will be re-modeled and opened by Oct. are located in Kaysville, West Kearns, Alta Canyon (Sandy), West Valley City and Centerville.
“These restaurant remodels are part of a multi-year strategy to reinvigorate our brand and the way our customers interact with us,” said Chris Hutchinson, Wendy’s division vice president. “More than just a new building, the re-designed Wendy’s means an entirely new customer experience that engages all five senses.”
The new Orem urban restaurant design is part of a multi-year strategy for Wendy’s. “This restaurant captures the essence of what we’ve stood for all these years,” said Hutchinson.
Those in attendance included Chamber President-elect Val Hale, council members Margaret Black, Mark Seastrand and Karen McCandless as well as several Chamber pacesetters. Wendy’s is now a member of the 1,100-plus-member Chamber.
An additional grand re-opening public event will take place Aug. 6 from 5 to 8 p.m. at the Orem Wendy’s location at 215 W. Center St. The event will highlight Special Olympics Utah athletes and sports, and 20 percent of the event’s sales will be donated to the Special Olympics of Utah.
